WARM FOIE-GRAS ON APPLE-BED |
A real feast dish, although it is quite simple to prepare. Of course, it is crucial to get a very good quality liver. Not suitable for dieters…
Serves 6
1 goose or duck liver weighing about 600-650g
3 green apples
1 lemon
Cinnamon
Powered cloves
Fleur de sel
Freshly milled pepper
Heat up the oven to 180C°. Peel the apples one by one, and squeeze some lemon juice on them immediately so that they would not go brown. Put some baking paper into an ovenproof dish and butter it.
With a mandolin grater, slice the apples very finely, and arrange them in a circle, overlapping one another like a fan. For six people make six apple circles. Season the circles with some cinnamon and powered cloves, then put them in the warm oven. Cook for about 15-20 minutes. When ready, it will look like a cake.
While the apples are in the oven, cut the liver in 6 pieces. Season with salt, pepper and put them in a hot frying pan 2 minutes on each side.
To serve, put the apple circles in the middle of the plate, (be careful to keep their shape!) and put a piece of liver in the middle of each. If you have a little bit of brioche near at hand, it can only increase the pleasure…
