A delicious marriage of sweet and salty... A soup for special occasions, to be served with a nice sweet wine, why not from Tokaj…
Serves 4
200 g smoked bacon cut in small pieces
1 onion
250g dried prunes without the stones
1 litre of good quality beef stock
20 ml cream
Olive oil
Salt if needed
Fresh pepper
Nutmeg
Clean and cut the onion in small pieces. Put the bacon pieces in a frying pan; let them sweat out their fat, until they become a nice reddish colour. Remove them from the pan and place them on a sheet of absorbent kitchen roll. Remove most of the fat from the pan and put in the onions with some olive oil. Cook them slowly until they go a nice yellow, and then add the dried prunes, cut into pieces, and the stock. Add a few turns of the pepper mill and cook all this together for about half an hour. Take it off the heat, add half of the cream and with a hand blender mix it well. Check the seasoning, add more salt if needed.
Whip the rest of the cream. When serving, prepare four nice cups, share the bacon in them. Pour the soup on it, then put a bit from the whipped cream on the top of each cup. Decorate your creation with a little bit of nutmeg.
It is not a “Weight Watchers” dish, but we love it…
